Warm Caprese Sandwiches

Here I am again posting another recipe with mozzarella, tomato and basil.

Sue me, it’s a delicious combination and you know it.

So I feel like i’ve been lacking in posts lately, and i’m sorry for this. April has just been a crazy month, and let me tell you, finals suck.

Most of you probably already know this, but seriously, summer needs to get here already.

In dealing with work, and school, plus doing free labor at food trucks it’s gotten pretty busy.

I was really excited to get the chance to work at some food trucks to gain some more experience cooking, and cooking in a food truck environment. I’ve learned a lot already. It may be free labor, but hey I feel like it’s paying off in an entirely different way.

Which is probably what i’ll be doing a lot of this summer is working at different trucks/restaurants trying to gain experience, so if anyone wants some free labor, shout out to me!

This recipe is very easy though. As easy as slice and serve. Literally, slice the tomato, slice the mozzarella, slice the bread and bam. Heaven between two pieces of bread.

Now of course you could also warm it up like I did, but this sandwich is good even without that. Drizzle a little olive oil on it when it’s done too, mmm mmm gettin crazy good!

Warm Caprese Sandwiches

2 slices Focaccia bread, regular or flavored
fresh tomato slices
fresh mozzarella
fresh basil leaves
olive oil


Set your oven to broil.
Lightly brush the pieces of focaccia with olive oil. Place tomato slices on one side then top with mozzarella slices. Place under the broiler openfaced until the cheese is gooey and warm, be very careful not to burn bread! The broiler is very hot and will easily burn the bread.
Once cheese is done, take out the sandwich and top with basil leaves.
Serve immediately and enjoy!
