A Fresh Start and Fresh Strawberry Lemonade

So these past 3 days have been busy busy trying to transfer all of my recipes and posts from my old website to this new one.

One by one, copy, paste, tag, post, cop that link, copy into the recipe page etc. There’s probably an easier way but that’s the only way I know of.

Anyway, i’m excited about moving from blogspot to wordpress. I felt like I needed to step up my game a little bit in the blogging world seeing as it’s become such a big part of my life.

Hopefully you all will approve of my new site.

Just try and bare with me for now, the site still needs to be changed up and put together. I’m still trying to get the hang of wordpress, but slowly and steadily i’m getting there.

And to celebrate my change I thought, why not celebrate with a cool glass of fresh strawberry lemonade?

Trust me, this stuff is like the nectar of the gods. Sweet and refreshing, nothing could be better on a hot summer day!

And don’t forget that Father’s Day is this weekend! You could always add in a little vodka or rum, ya know just sayin’, cause i’m sure your dad wouldn’t mind!

Fresh Strawberry Lemonade

(Recipe adapted from Emeril Lagasse)

2 cups water

1 cup sugar

1 tablespoon grated lemon peel

1 cup fresh lemon juice

1 pint fresh strawberries, hulled and halved

1 tsp vanilla extract

2 cups cold sparkling water or club soda

In a medium sauce pan bring the water and 1/2 cup of sugar to a boil. Reduce heat and simmer until the sugar dissolves. Add the lemon zest and lemon juice and stir. Take off heat and let cool slightly, and pour in a pitcher.

Meanwhile, in another saucepan add in the other 1/2 cup of sugar and the strawberries and let cook over medium heat until syrupy and the strawberries are soft. About 10-15 minutes. Once syrupy, add in the vanilla extract and take off heat.

Using an emersion blender, puree the srawberry mixture until smooth. Pour into the pitcher along with the lemon juice mixture.

Add in about 2 cups of sparkling water or tap water, stir and serve over ice.

Garnish with mint or basil leaves and a slice of lemon!
