Oh the humble sandwich.
Seriously, sandwiches get a bad wrap sometimes in my opinion. Yes, they are ever becoming more and more popular in the food world, but for many it’s just something you throw together real fast for a quick meal. Sandwiches have become packaged mystery meat, so called “cheese”, slathered with mustard and mayo and all heald together with skimpy thin sliced white bread.
But sandwiches are so much more than that. The possibilites are endless when it comes to making your own sandwich, I mean, different breads, meats, cheeses, condiments, veggies. You can put whatever you want on it and the flavors will be completely different!
And not only can you have savory sandwiches you can also make sweet sandwiches as well! Peanut butter and jelly, nutella and banana, seriously you guys, it’s time to change up your sandwich fix.
And with all of the new and crazy recipes on the internet these days, there is absolutey no reason why you shouldn’t try making a new and different sandwich.
It doesn’t even have to be fancy or hard, just look at this one I’m sharing with you all today. It’s easy and delicious. Just bake some chicken, make some pesto, put everything together and grill it and you’re done! Practically 4 steps! That’s not hard at all. Plus you get your fix of grains, veggies, proteins and calcium. Totally healthy right?
Chicken Caprese Panini’s with Basil Pesto
(Recipe by Sarah Eats Austin)
4 ciabatta rolls
4 boneless chicken breasts, thin
2 tbls olive oil
2 tbls balsamic vinegar
8 slices tomato
8 slices fresh mozzarella
basil pesto (Recipe follows)
Preheat oven to 350F.
Place your chicken breats in a baking dish and season with garlic salt. Drizzle the olive oil and balsamic vinegar over the top and bake for 25-30 minutes. Check the meat with a knife to make sure it is cooked all the way if you have to.
Start heating your panini press and while you assemble the sandwiches.
To assemble spread the pesto over one side of the ciabatta roll. Lay two tomato slices over the pesto, then a piece of chicken, add two slices of mozzarella, then top it with the other side.
Grill in the panini press until cheese is melted and the bread is crusty.
1/4 cup pine nuts
10 basil leaves
2 cloves garlic
1 ounce goat cheese
1/4-1/2 cup olive oil
salt and pepper to taste
Combine the pine nuts, basil, garlic, goat cheese and 1/4 cup olive oil. Blend until smooth. Add more olive oil if needed and season to taste.
