Pumpkin Goat Cheese Bread Pudding

Happy halloween!

I know I should be posting about how to make homemade candy, or what to do with leftover candy but well… I’m not.

I guess I haven’t gotten into the halloween spirit yet.

Halloweens great, I love the movies, I love candy, but I’ll be honest it’s not one of my favorite holidays. I honestly don’t know why, I’ve had some very fun times on halloween.

When I was younger, my older brothers, some neighborhood friends, and I would all dress up and go trick or treating. If I couldn’t figure out what I wanted to be I would be a “flower girl”, my mom would sew flowers onto a jacket for me. It was pretty fun actually.

I guess now I just have no idea what I want to do, what I want to wear. I’m uncreative. Or maybe I’m just waiting for Thanksgiving to devour all the wonderful delicious food! Yeah, I’m going with the latter.

In any case! Here is a delicious fall treat! I know some may be put off by goat milk, but it gives the bread pudding extra creaminess and tang, without being too sweet.



Pumpkin Goat Cheese Bread Pudding

(Recipe by Sarah Eats Austin)


1/2 cup pumpkin puree

1/2 cup goat cheese, room temperature

1 tsp cinnamon

1/2 tsp nutmeg

1 tsp vanilla extract

1 cup sugar

3 eggs

1/2 cup milk (I used 2%)

1 cup heavy cream

1/2-1 cup chocolate chips

1 loaf french bread. cubed


Cinnamon Whipped Cream

1 cup heavy cream

1/2-1 tsp cinnamon

1 tsp vanilla extract

3 tbls sugar



In a large bowl combine the pumpkin and goat cheese, whisk to combine. Add in the sugar and spices and stir to combine. Add in the eggs. Whisk to combine.

Gently whisk in the milk and heavy cream.

Gently fold in the cubed french bread and chocolate chips. Let sit for about 5-10 minutes to soak up. **The bread I used was very soft so it soaked it up fast. If bread is harder let it soak longer.

Sprinkle with extra sugar and bake for 25-30 minutes.

Don’t overbake!


For the whipped cream combine the cream in a stand mixer fitted with the whisk and whip until stiff peaks. Add in the sugar, cinnamon and vanilla and whisk until all combined.
