You get to be crazy, neurotic, and moody almost 24/7 and you have an excuse. Who wouldn’t love that? And the best part? You get to be like that even if you don’t want to! Woo! Didn’t we hit the jackpot?
Okay, now I’m not trying to say anything bad about woman, or men for that matter, if someone somehow finds a way to think I’m out to get them or whatever. You see, it’s just so true. I’ve used excuses like, “Oh, my hormones are off, sorry I’m moody. It’s really not my fault.” It’s just too easy. I’m pretty sure if you have an excuse, you’re going to use it. Which is awful. Because sometimes, it really is hard not to honk and yell at that person who cut you off. Sometimes it is hard to be bright and cheery before you have your morning cup of coffee. And sometimes, you just need something sweet to get through the day.
Which is where this baked pudding comes in. It’s a mood changer. It’s bright and cheery and absolutely delicious. If you’re a guy and your girlfriend/wife is upset, I promise you if you make this for her she will be happier. You can do no wrong with this! And there again same goes for women to men. Guys get grumpy too sometimes, so make them something sweet.
Break the rules for once. When life gives you lemons make pudding!
Meyer Lemon Baked Pudding
(Recipe adapted from Bijouxs)
5 tablespoons unsalted butter, melted
1 cup sugar
4 tablespoons flour
4 egg yolks, lightly beaten
4 egg whites, stiffly beaten
Grated zest and juice of 2 large Meyer Lemons (about 1/2 cup)
1/4 cup milk
Preheat the oven to 350 degrees. In a large mixing bowl blend the butter with the sugar and flour. Add the egg yolks, lemon juice, zest and milk, mix well. Gently fold in the stiffly beaten egg whites just until mixed.
Pour the batter into a greased baking 11 x 7 x 2-inch baking dish and bake for 45 minutes, just until set.
