Shirred Eggs with Chicken and Romano

I have had such a craving for brunch. I don’t even eat brunch but the food! Just think of the food! Waffles, pancakes, french toast, eggs benedict, omelettes, sausage potato hash, oh my…. I believe that would be food heaven for me.

Who knows why but eggs have been in my thoughts lately. Who doesn’t want some creamy rich eggs to wake up to in the morning to sooth all of your morning grumpiness. Scrambled with salsa, or poached on toast, eggs are great. Lovely little pillows of deliciousness bursting with a surprise of egg yolk that will make you drool. Yeah. Can you really say no to that?


Shirred Eggs with Chicken

(Recipe adapted from School)


2 eggs

shredded chicken

diced onion

cheese of your choice, I used pecorino romano

salt and pepper to taste



Preheat oven to 375F.

Place the onion and chicken in a small ramekin. Sprinkle some cheese on top before cracking 1 egg on top. Add a little more cheese and crack some fresh ground pepper over top.

Bake for 10-12 minutes or until the egg is done.

Take out and enjoy!
