I think I need a little variety.
I posted two eggs dishes in a row and now I’m posting two coconut dishes in a row. The horror.
In my defense can you really beat eggs and coconut? They’re like the underrated foods of the gods just waiting to excite your tastebuds into delicious heaven. Yeah. They’re that good.
Besides, they’re both pretty healthy right? Forget about the cholesterol count in eggs and the sugar content in granola and they’re practically vegetables. Ok, maybe not but they are pretty good for you. Especially if you make it at home.
What I love most about making granola at home is that you can basically throw in anything you like and make something new every batch. Raisins? Yes! M&M’s? No one’s judging! It’s granola, it’s healthy. Learn that lesson in life and you will go far my friends. For me, because I absolutely love chocolate and coconut I made this delicious creation.
Chocolate Almond Coconut Granola
(Recipe by Sarah Eats Austin)
3 cups oats (not quick cooking)
3 tbls raw cacao powder
1 1/2 cups sliced almonds
1 1/2 cups shredded coconut
1/4 cup coconut oil, melted
1/4 cup honey
1/4 brown sugar
Preheat oven to 375F.
In a large bowl mix together the oats, cacao powder, almonds, and coconut. In a smaller bowl whisk together the honey, coconut oil and brown sugar.
Pour the wet into the large bowl of oats and stir gently to distribute everything evenly. Pour the mixture onto a foil lined baking sheet evenly and place in the oven.
Bake for about 10 minutes then stir. Continue baking in 10 minute intervals until starting to turn brown and crispy.
Let cool and enjoy.
