Chocolate Hazelnut Truffles

Oh chocolate. Is there really anything better? After a long day of work or school nothing can soothe the soul better than a big piece of chocolate. Or two.

In any of it’s many forms chocolate is always good. Chocolate cake, chocolate pudding, and of course chocolate truffles. Rich and decadent, truffles are just a great little pick me up anytime of day. Small enough to not leave you stuffed and tired, but rich enough to give you that little chocolate fix you crave.



Chocolate Hazelnuts Truffles

(Recipe adapted fromĀ Ina Garten)


1 cup(5 oz) hazelnuts

3 1/2 oz good bittersweet choceolate, chopped

3 1/2 oz good semi-sweet chocolate, chopped

1/2 cup heavy cream

1 tsp vanilla extract

1 tbls prepared coffee


Preheat oven to 325F.

Chop and roast the hazelnuts for 10 minutes. Set aside.

Chop the chocolate and place in a metal bowl. Bring cream to a low boil and pour over the chocolate, whisk together until it is all melted. If it’s not completely melted, use a double boiler to help it out. Add in the vanilla and coffee and stir until smooth. Add in half of the chopped hazelnuts and stir until combined.

Chill the chocolate/hazelnut mixture for 45 minutes to and hour until it is easy to work with.

With a small ice cream scoop, scoop out small rounds of the chocolate ganache and work into nice little balls. Roll in hazelnuts to coat then let chill, preferably overnight.
