Don’t you just love coconut? Maybe I’m a bit obsessed but I put it in like everything these days. Granola, oatmeal, as body lotion… It’s just so good. I know the coconut train has already come and gone but I think we need to bring it back. What do ya’ll think?
What I love most about making granola at home is that you can basically throw in anything you like and make something new every batch. Raisins, cranberries, chia seeds, etc. It’s granola, it’s healthy. Learn that lesson in life and you will go far my friends. For me, because I absolutely love chocolate and coconut I made this delicious creation.
Chocolate Almond Coconut Granola

3 cups oats (not quick cooking)
3 tbls raw cacao powder
1 1/2 cups sliced almonds
1 1/2 cups shredded coconut
1/4 cup coconut oil, melted
1/4 cup maple syrup
1/4 brown sugar
Preheat oven to 375F.
In a large bowl mix together the oats, cacao powder, almonds, and coconut. In a smaller bowl whisk together the maple syrup, coconut oil and brown sugar.
Pour the wet into the large bowl of oats and stir gently to distribute everything evenly. Pour the mixture onto a foil lined baking sheet evenly and place in the oven.
Bake for about 10 minutes then stir. Continue baking in 10 minute intervals until starting to turn brown and crispy.
Let cool and enjoy.
