This is a little bit like one of my previous recipes, the coconut cauliflower curry. In fact it’s very similar, I just love this recipe.
This is one of those recipes that if you are trying to eat healthier but don’t want to feel deprived, you’ll be fine with this one. While yes, coconut milk is very calorie dense, coconut milk also is very filling. I got so full from just a few pieces of cauliflower because of the coconut milk coating my stomach. It’s perfect. And of course we all know how great cauliflower is for us, so why not get it in our diets somehow?
I think I may just call this the year of coconut. Almost everything I make has some sort of coconut in it. Coconut cake, coconut granola, coconut tiramisu. Dare I say I’m going, coco-nutty?
You can’t not throw in a lame joke every once in a while.
So if you’ve never tried coconut macaroons let me just start by saying they will change your life. They are sweet but not too sweet and light but not straight up mereingue cookie light. They are a perfectly balanced cookie that is perfect for warmer weather. And look how adorable they are! They’re like little clouds of coconut awesomeness. And if you want to make them even more delectable you could always dip them in chocolate and you’ve got one of life’s greatest pleasures.
This cake was originally going to be posted as an Olympics themed “eat this while you’re watching the Olympics because it has snowball in the name” post but what do you know the Olympics is over. Was it shorter this year? In the blink of an eye it was here and now it’s gone.
