Vanilla Cupcakes with Milk Chocolate Frosting

Food memories are some of the strongest. When I smell onions being caramelized with peppers in olive oil I’m immediately transported to when my parents would make fajitas. Or when I smell tomato sauce cooking on the stove it usually meant lasagna was on it’s way. But those are both memories conjured up mostly from smell. These cupcakes, while only just a small fraction of the food I’ve been made by my grandmother and probably only made a couple of times by her, are something that everytime I go to visit her, I think of these cupcakes.

Mixed Caramel Rum Nut Butter

I think it is pretty safe to say that 2014 was the year of the butters. Cookie butter, nut butters, you name. Grind it up and call it butter. I’m ok with this.

But as usual I’m pretty late to the party. Here I am, half a month away from 2015, and finally I produce some sort of butter. Good job me.

Holiday Recipe Roundup!

I remember when I was a little girl, the holidays seem to take forever to get here. I would wake up each day and it seemed to just drag on. I would watch movies, drink hot chocolate and popcorn, we would do all of the usual holiday festivities. It was a really good time.

Nowadays, I still do most of that but now it seems like the holidays just creep up out of nowhere. Like there’s not much of a break between summer and Christmas. I guess my inner child would be excited.

While I am totally behind on the holiday cooking and baking this year, I thought I would roundup some recipes that are favorites around this time and maybe they’ll give you some inspiration!

Coconut Flour Chocolate Chip Cookies

I would like to add cookies to the list of foods that everyone should know how to make from scratch. I mean, really if you can’t figure out how to bake cookies then you’ve got bigger issues at hand. It’s not the cookies fault that you’re incompetent. Sure, maybe your first batch won’t come out great, maybe not even your second or third, but that’s why you have to start practicing now. You never know when the time will come when freshly baked cookies are needed.

Chocolate Hazelnut Truffles

Oh chocolate. Is there really anything better? After a long day of work or school nothing can soothe the soul better than a big piece of chocolate. Or two.

In any of it’s many forms chocolate is always good. Chocolate cake, chocolate pudding, and of course chocolate truffles. Rich and decadent, truffles are just a great little pick me up anytime of day. Small enough to not leave you stuffed and tired, but rich enough to give you that little chocolate fix you crave.

Guinness Chocolate Chocolate Chip Cookies

It is done. The spring semester of 2014 is officially over and you have no idea how happy I am.

 Of course, that’s not to say I didn’t have fun this semester. I did. I didn’t have any professors that I just could not stand and the classes I had, well besides algebra and speech, were really fun. This semester involved lots of sugar, lots of steaks, and lots and lots of butter. Does that sauce need anything? Butter. Need to kick up your cake some? Add butter. Butter is the answer.

I’m pretty sure my arteries are glad this semester is over as well.

 Aside from eating way more delicious foods than I should have, I should mention that I also killed a lobster for the first time. The entire time the only thing I could think of was “Lobster killer…. lobster killer… lobster killer…” Julie & Julia anyone? And yes, I really did feel bad. For a person who doesn’t eat just a whole lot of meat, it’s hard. For my justification though he was very delicious and will always be remembered by me. R.I.P. little buddy.

Anyway, now for these cookies. Recently a friend of mine turned 21 and so I decided to make some guinness cookies. It’s only fitting right? I was a little disappointed with the subtlety of the guinness flavor in the cookie, I think next time I’ll add more or reduce the guinness down to give it a stronger flavor, but aside from that these cookies are addicting. Soft, chewy, and very chocolatey. I would definitely make these cookies again.
